Mexican Rice with Amira Basmati Rice

AMIRA EXTRA LONG GRAIN BASMATI RICE
Soaked in water for 30 mins 350 g
Refined oil 60 g
Chopped onion 80 g
Chopped garlic 25 g
Ginger paste 20 g
Tomato paste 30 g
Vegetable stock 500 g
Chopped tomato 250 g
Cumin powder 20 g
Chilli powder 15 g
Salt 20 g
Chopped coriander 20 g

COOKING METHOD
In a pan sauté onions and garlic, then add chilli powder, ginger paste and tomato paste. Sauté well.
Add amira extra long grain basmati rice and salt. Cook well for 5 mins.
Add vegetable stock and chopped tomatoes and bring to a boil. Simmer and cover with a lid.
Sprinkle in the cumin powder.
Cook until the rice is firm and the water has evaporated.
Spoon the pilaf rice on a warmed serving dish and scatter the chopped coriander over the top to garnish.
