Amira Basmati Rice Vietnamese Rice & Prawn Cucumber Salad

What You Need

For the rice:

300 g Amira Superior Aromatic rice
1 tsp sunflower oil

For the dressing:
2 limes, juiced
2 tbsp light soy sauce
2 tbsp sesame oil
1 tbsp fish sauce
2 tsp caster sugar
2 shallots, finely chopped
1-2 pc birds eye chillies, finely sliced
1 bunch coriander, chopped
1 bunch chives, snipped
salt & freshly ground pepper to taste

For the salad:

120 g cashews
300 g raw, shelled king prawns
2 cloves garlic, finely chopped
1 tsp sunflower oil
150 g mange tout, finely sliced
half a large cucumber, cut into julienne strips
1 red pepper, finely diced
